But it's Bland

I decided last night I wanted to make a basic veggy broth.
I added a full onion, celery, garlic, ground pepper, salt, carrots, red peppers, leek, basil, oregano, cayenne and sage.

It's still bland.

I have no idea what else to add to make the broth have taste. I really do not want to have to start over.

  1. hi...just found you and signed on to follow! i've always wanted to visit newfoundland but have only made it as far as cape breton! don't throw your stock away. you have a good base. i haven't read through your blog yet but i am guessing you want this to be vegetarian? add vegetable boullion cubes or more salt. don't be afraid of salt. stocks need it or they are almost always bland. i cook a LOT so if you have any questions you can always ask me. you didn't say what the ratio of veggies to water was that you used. you need a lot of veggies to get a good stock. another big hint is to roast the vegetables in your oven or saute' them until they are browned in a heavy pan on the stove and then make the stock. this always gives you a much richer flavor! hope this helps!

    I ended up adding some fettuccine to it for a noodle soup.
    I was trying to make a stock so that I would not have to resort to vegetable boullion cubes. Sort of in place of for other soups, but it just did not work.
    I added a table spoon of sea salt actually. That might have been my mistake.
